The emblem of Ruinart taste
COMPOSITION – VINIFICATION
Assembly consisting of 100% Chardonnay from different vintages (from 20 to 25% of reserve wines from the two previous vintages).
Origin: a decisive predominance of Premiers Crus from the Côte des Blancs and the Montagne de Reims for their aromatic finesse, complemented by wines from Sézannais known for the roundness they can provide. Finally, some wines from the north of the Vesle valley give a touch of freshness and lightness.
Vinification:
• Manual harvest
• Alcoholic fermentation in thermoregulated stainless steel vats • Malolactic fermentation
• Dosage: 9 g / l
TASTING NOTES
The color is a beautiful pale golden yellow with light green reflections, the dress is bright and luminous. The lively effervescence is released in a persistent way.
The first olfactory examination reveals great intensity, with notes of fresh fruit, in particular ripe citrus. On the second examination the wine is delicate and floral, with notes of flowers and white fruits (white peach).
The attack on the palate is soft, harmonious, with great roundness. The vinosity is without excess, supported by a superb freshness. Notes of peach, citrus and a pleasant final minerality emerge. The finish is very persistent and refreshing.
FROM GLASS TO PLATE
A perfect Champagne for an aperitif, especially in spring or summer.
At the table it goes very well with all seafood and crustaceans and is perfect with a sea bass or sea bream tartare. Even a sole alla plancia is an optima combination.
