    MAISON RUINART 1729: AN IMMERSIVE EXPERIENCE

    FOR THE FIRST TIME IN MILAN IN THE SPACES OF IDENTITÀ GOLOSE

    Identità Golose Milano, the first International Gastronomy Hub born in 2018, will be the casket of Maison Ruinart 1729, an immersive and multisensory experience that the oldest Maison de Champagne will bring to bon vivre enthusiasts, for three days of absolute excellence.

    From November 19th to 21st, Ruinart will unveil its centennial history of savoir-faire through three exclusive dinners that in Maison Ruinart 1729 are transformed into a real dream journey animated by the virtual reality Petit R: every dinner becomes an immersive experience realized through a 3D videomapping and the concept of anamorphosis, where the drawings of the Japanese artist Kanako Kuno come to life on the table in the room, staging the history and rich heritage of Maison Ruinart.

    A journey enriched by the culinary art of the Chef of Maison Ruinart, Valérie Radou who, for the first time, leaves the headquarters in Reims in Champagne to transfer all her creativity and mastery to the Identità Golose Milano Hub. Resident chef since 2018, Valérie will be able to conquer the public with an exclusive menu, where each dish is designed to be perfectly paired with its cuvée: and here the freshness of Ruinart Blanc de Blancs is enhanced by the oyster, as entrée, followed by the turbot by Bertrand Mure (homage to one of the founders of Maison Ruinart), with cauliflower cream, in its green, orange and white variants, to underline the roundness of the Chardonnay. The main course is based on contrasts: guinea fowl with pumpkin, chanterelles and licorice juice paired with Ruinart Vintage 2011, the long-awaited cuvée that from this year is also distributed on the Italian market. A Vintage that also perfectly accompanies Chaource, a typical cheese from the Champagne region, with grapes and granola. Finally, pear infused with hibiscus, grapefruit and rose, aromas that we find in the Ruinart Rosé, the cuvée that accompanies the dessert. Refined ingredients, seasonal products, creativity which, together with the suggestions of the Chef de Caves, allow Valérie to give her guests an unforgettable experience.

    In addition to the three exclusive Petit R immersive dinners, which will be held for only 12 guests in the oval hall of the Hub, Ruinart is the absolute protagonist of Identità Golose Milano thanks also to the 4-handed dinners with Valérie Radou and the Chefs of Ruinart Assemblage 1729, the refined circuit of Italian restaurants selected by Ruinart, where the philosophy of the oldest Maison de Champagne blends with the refined artistic sense, the service, the culinary and cultural proposals of the premises.

    In particular, on Friday 19/11 the dinner will be signed by Denis Pedron, Corporate Executive Chef of the Langosteria group who participates by representing Langosteria Bistrot Milan, on Saturday 20/11 and Sunday 21/11 by the two Michelin star Chef Giuseppe Mancino of Il Piccolo Principe di Viareggio. Each chef, together with Valérie Radou, will create a special menu that will have sea bass with celery and lovage oil as an appetizer, Valérie’s signature dish for this autumn, accompanied by Ruinart Blanc de Blancs.

    Vine-wine experience, family traditions, savoir-faire and conscious art de vivre: the Maison Ruinart has written its destiny for almost three centuries with these values, becoming a reference of excellence, elegance and innovation in the world of Champagne.
